Slow Cooked Pulled Pork Lettuce Wraps

This Slow Cooked Pulled Pork Lettuce Wrap recipe is a great option for meal prepping, which I do every week.   I use a Meal Prepping system that provides me with lots of great recipes and prepping directions, and have subscriptions to a few others like Meal Planning Central and Six Sister Stuff because I like the variety.

It’s the organization and structure that I really need, so that I can prepare healthy meals that hopefully everyone will enjoy.  I do often substitute family favourite recipes, but at least I have a starting point, and I block off the time to shop and prep.

This recipe for Pulled Pork is Keto friendly, and we often serve it as lettuce wraps for us while the kids can use it as filling inside warmed corn tortilla’s (Not gonna lie, we eat those too because they are soooo good!).

Pork is not only lean, and adapts to flavours really well, it’s also inexpensive, so I often buy it in large portions and make intentional leftovers.  Leftovers can be frozen for use later, or  I use them to make healthy portable lunches. Win Win.

 

Instant Pot or Slow Cooker

Many recipes that were originally designed to work in the slower cooker also can be adapted quite easily to work in the Instant Pot.  This pulled pork recipe is no exception.   The Instant Pot works incredibly well for meats that require a longer cook time to become tender and juicy.   Depending on what my needs are, I decided if I am going to slow cook, like when I’m out all day at work, or Instant Pot Cook, like when I am meal prepping.

The results are delicious either way, and if you really want to kick it up a notch, spread the pulled pork onto a baking sheet and broil for a few minutes to get some nice crispy edges on the pork.

If you have picky eaters, this one is good too; the pork is flavourful and moist, but not spicy or over seasoned allowing the toppings to really stand out.   A platter of topping choices can include whatever your family enjoys, we have a few standards.

Pico de Gallo, diced red onions, slices of avocado, shredded Mozzarella cheese or feta cheese, salsa red and green, you are only limited by your imagination! (and what’s in your fridge of course).

If you really want to take it to the next level, make this broccoli slaw and use it to top. Try these, I think you’ll enjoy them no matter how you prepare them.

Slow Cooked Pulled Pork in Lettuce Wraps

This delicious low-carb pulled pork recipe takes only 10 minutes to put together. After that, you’re free to do something else while your slow cooker transforms it into a nearly effortless melt-in-your-mouth dish your family will love.

Ingredients
  

  • 2 lbs. pork shoulder
  • 2 t. onion powder
  • 1 t. garlic powder
  • 2 t. dried rosemary
  • 2 t. smoked paprika
  • ½ t. cayenne pepper
  • 1 t. ground fennel seeds
  • 2 t. cocoa powder
  • Sea salt and black pepper to taste
  • 1/3 c. organic sugar-free chicken broth
  • 8 iceberg or butter lettuce leaves

Instructions
 

  • Combine all spices and the cocoa in a small bowl and season with salt and black pepper, to taste. Rub the spice mix all over the pork shoulder and transfer to a 5 or 6-quart slow cooker crock. Add the chicken broth to the crock and cook on high for 4 hours or on low for 6.
  • Once the cooking time is complete, use two forks to pull the pork apart while it is still in the slow cooker crock. Allow the pulled pork to remain in the juices with the slow cooker set to “warm” for 20-30 minutes to absorb more flavor.
  • If you want this to be like Carnita's and have some crunchy bits, transfer the shredded pork to a baking sheet and broil for few minutes until some pieces are nicely browned.
  • To serve, fill each lettuce leaf with some pulled pork and top with some Broccoli Slaw, or other Taco toppings of your choice.

Instant Pot Cooking Instructions

  • Place seasoned pork roast in the bottom of your Instant Pot, add 1 cup of chicken broth.
  • Set Instant Pot to HIGH pressure for 45 minutes. Then do a full NPR (Natural Pressure Release).
  • Open lid, remove pork roast from Instant pot and shred using two forks. Add pork back to the liquid in the Instant Pot. If you want less liquid remove some before adding the meat back into the pot or let reduce on saute for a few minutes.
