Neptune Salad; better than the deli

Neptune Salad

 

Neptune Salad, normally I get it at the Deli Counter in the grocery store.  I wouldn’t think I would like it as I’m not a fan of “fake crab”, but somehow, this salad is tasty, and different, it makes a good lunch.   What’s not good it the PRICE that they charge for it; I recently paid $5 for a very small container, and I thought, okay I can do better!     Let’s make this at home, exactly the way I like it and for less than a quarter of the price.  Sounds like a plan!

What’s in Neptune Salad?

The recipes change from deli to deli, and there are of course a ton of recipes on Pinterest,  but there are a few basic ingredients that seem consistent, so that’s where I started when developing this recipe.

  • Pollock (fake crab)
  • Mayo
  • Celery

In some deli’s that’s pretty much it, and while it’s good, I wanted AMAZING and filling and healthy.   That’s where the veggies come in.   More flavour, more nutritious and it’s prettier too!   I combined my favourite combination of vegetables, added Old Bay as the seasoning and WOW, this is Amazing Neptune Salad.    My recipe includes:

 

  • Shredded carrot
  • Frozen corn
  • Red onion
  • Dill, fresh or dried
  • Old Bay
  • Salad shrimp, optional

A quick and easy seafood salad that's great for lunches, snacks or an appetizer with crackers.

Ingredients
  

  • 2 cups imitation crab coarsely chopped
  • 2 stalks celery sliced
  • 1/2 cup frozen corn defrosted
  • 1/4 cup shredded carrot
  • 1/4 cup red onion finely diced
  • 1/2 cup mayonnaise
  • 1/2 teaspoon Old Bay seasoning
  • 1/2 teaspoon dill
  • Salt and Pepper to taste

Instructions
 

  • Prepare all the raw ingredients, crab, celery, red onion, carrot and corn. Place in a large mixing bowl.
  • Add mayonnaise, Old Bay, dried dill, salt and pepper. Stir to combine.
  • Let sit at least 20 minutes to meld flavours

Notes

Serve as is with crackers, use on top of salad or as a filling for sandwiches.
