Crock Pot Meal Prep Salsa Chicken
Ingredients
- 4 boneless skinless chicken breasts 320z
- 2 cups chunk salsa your favourite
- 2 cups fresh or frozen corn
- 15 ounces black beans rinsed and drained
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion granules
- 1/4 cup cilantro chopped
- salt to pepper
TOPPINGS:
- Cheddar Cheese shredded
- Cilantro chopped
- Avocado cubed
- Red Onion diced
- Corn Tortillas crushed
Instructions
- In a Slow cooker layer the ingredients as follows: chicken, salsa, corn, black beans.
- Sprinkle all seasoning over top of salsa, and stir.
- Smooth Salsa Corn mixture evenly over chicken breasts
- Cover the crock and cook on low for 6-8 hours or high for 4-5 hours.
- Shred chicken and serve with toppings of your choice
Notes
Freeze up to 6 months
To Cook: Dump frozen into your crock pot and cook on High for 6-8 hours
Serve over rice, pasta or potatoes with toppings of your choice. Leftovers or Intentional leftovers are excellent as a filling in Quesadillas, Taco's, Taquitos, Burritos, Nacho toppings, and lunch bowls or Quick Chicken Taco Soup.
