Side Dishes

Side dishes, we’ve all got our favorites, and as much as my kids love my Instant Pot Mashed Potatoes, we can’t eat them every night!

When meal planning we often forget the sides, which results in some last minute stress.  Figuring out what vegetable and starch to make, checking for ingredients on hand and hoping it all works out.  We’ve all been there and it’s not fun or necessary.

Choosing recipes for side dishes that can be prepped ahead, or repurposed into another dish for another night is a huge help and will keep you on track and stress free.

Think steamed rice one nice for a delicious burrito bowl, make extra and use it for fried rice another night.   Check out my hugely popular Hoisin Fried Rice recipe.  Quick, easy and so delicious.

Instant Pot Mashed Potatoes are fabulous with Marry Me Meatloaf, then repurposed into crispy cheesy Potato Patties or topping for Shepherd’s Pie.

The term Lazy Days of Summer sure doesn’t apply at our house!  I actually think our schedules are even tougher as everyone is all over the place… Summer School, Camps, Vacations, Kids work schedules, and on and on and on…..

Somehow I always get excited at the end of the school year that I DON’T have to make any more lunches, and then a week into July, I’m totally back into Meal Prepping and Planning,

This Summer I’ve been stocking the fridge with an assortment of  homemade sides instead of the standard tub o’ salad from the store!    Now that being said, it seems that no one but Mom, can actually make small lunch sized containers of food to take on the run,  so I’m just surrendering and going to make them into individual portions as I prepare them… *lol*
